With the hot weather at the moment, it’s no surprise that I’m thinking of salads at the moment. Here is  one of my favourites!

Asparagus, mint & wild rice salad with a walnut dressing (Catherine Fulvio)

Ingredients:

1 onion, finely sliced

250g cooked wild rice

12 asparagus spears, cooked and sliced i ntow

60g soya beans, blanched

5 sprigs mint

For the dressing:

1/2 chilli, finely sliced lengthways

4tbsp walnut oil

handful chopped walnuts

1 lemon, zest & juice

1 tbsp capers

Salt and freshly ground pepper

Instructions

1. To make dressing, warm walnut oil and add chilli, lemon zest and juice and capers.

2. Heat some olive oil  and saute the onion until soft (5-7 minutes).

3. Combine onion, rice , aspargus, beands and mint in a mixing bowl. Add dressing and allow to infuse for about 10 mins

4. Sprinkle with chopped walnuts
